
Salmon en Papillote
What is Salmon en Papillote?
"En papillote" translates to “in paper” in French. The term "salmon en papillote" refers to the traditional French technique of cooking salmon wrapped in parchment paper. This method can also be conveniently adapted for preparing a delicious dinner for two in an air fryer.
Ingredients:
- 6 oz thick skin on salmon fillets(2)
- 16-20 asparagus spears, ends removed
- 2 tbsp extra-virgin olive oil
- 3-4 cloves of garlic (finely chopped or grated); reserve some for butter
- Salt and pepper to taste
- 4 fresh dill sprigs, plus more for garnish if desired
- 1 large lemon, sliced thinly
- 2 tbsp capers drained (optional)
Lemon Garlic Butter
- 3 tablespoons butter, melted
- 1/2 tsp grated/pressed garlic
- zest of one medium lemon
- juice of 1/2 medium lemon
Directions:
- Preheat an air fryer to 400 degrees F (200 degrees C) for 10 minutes.
- Place 2 pieces of parchment paper side by side; crease each piece in half. Place equal amounts of asparagus along one half, drizzle with oil, garlic, salt, and pepper. Lay salmon fillets beside the asparagus spears and drizzle with oil, garlic, salt, and pepper. Top with 2-3 lemon slices, 2 sprigs of dill, and capers(optional)
- Fold up each parchment square: first fold the rectangles in half over the fish. Then, starting at one corner, make a series of straight folds on the outer rim of the squares to seal the edges together.
- Cook in the preheated air fryer until salmon easily flakes with a fork, about 10-12 minutes. The parchment packages should be puffed up and slightly browned when fully cooked.
- To make the Lemon Garlic Butter, whisk together the melted butter, lemon zest, lemon juice, and garlic. Pour the butter over the cooked salmon and asparagus. Garnish the salmon with slices of lemon and fresh dill.
